Saucier pans are ideal for, you guessed it: sauces. This is the smallest size in this series with a liquid volume of .9 quarts, or 28 fluid ounces. It is most useful when you don’t need a lot of sauce to dress up a perfect piece of poultry. Or when you just want a bit of hollandaise to dress up your poached eggs. Small sauciers are an important tool to have on hand because sauce is often an accessory to your meal and you don’t really need a lot of it. For times like this, a small saucier will cook your sauce quickly and efficiently by focusing the heat into a smaller pan.
This saucier pan is made with a dual copper and stainless steel construction. The exterior copper layer has a beautiful brushed finish and is super thick at 2.3 mm. This super thick copper layer absorbs all the heat from the stovetop that is then transferred throughout the copper layer all around the saucier. Then a super thin stainless steel layer on the inside of the pan accepts that heat and transfers it quickly to the sauce inside. Your sauce isn’t just being cooked from the bottom, it is accepting heat from all around and makes for a very efficient cooking process.
The pan is designed with a cast iron handle that is elegant and ergonomic to your hand for a safe cooking experience. When you’re maneuvering your saucier while you’re cooking or transporting it when you’re done or while you’re setting up, it’s important to have a comfortable hold on your pan. The saucier also comes with a copper lid that has a little cast iron handle of its own. The lid is sturdy and fits close to the pan to prevent boil-overs and keep all the moisture and heat inside when you want it to.
